Does anyone have suggestions for an anime to watch? I recently finished both seasons of Gundam 00, Soul Eater, and Gurren Lagann.

Well, I'm a fan of Darker than Black, the second season of which is starting up on Thursday in Japan!
The studio that makes Darker than Black (and Soul Eater/Fullmetal Alchemist/Eureka Seven/Wolf's Rain) is one of my all-time faves, and they did a special series that ran on the Playstation Network called "Xam'd: Lost Memories", and its awesome.
Also, check out www.animenewsnetwork.com/feature/2009-10-01 for a good look at the fall preview for 2009!
Oh, and Code Geass, though melodramatic and ridiculous at times, is pretty fun.
You should also consider classics such as Neon Genesis Evangelion, my fav of all time. Oh, and I also enjoyed the Melancholy of Haruhi Suzumiya.

I really enjoyed Fate/Stay Night, and Tsukihime to a lesser extent.
Rozen Maiden was surprisingly good imo, but i guess I'm just weird like that cuz I also loved Lucky Star.

Although some of these may seem obvious, I suggest:
~ Sayonara Zetsubou Sensei (there are several seasons, but the one with just this as the title is the first) ~ Ouran High School Host Club (because although it's girly, I know boys who have like it) ~ Death Note ~ Ruroni Kenshin ~ FullMetal Alchemist (the old or the new, but the new is much more manga-accurate, whereas the old had an made-up ending. Both enjoyable) ~ Axis Powers Hetalia (because it's my love and the episodes are only 5 minutes each) ~ Detroit Metal City (as far as I know, only about 10 episodes have been subtitled, gag-style) ~ Cromartie High School (gag-style again - which means weird humor and short episodes)
I can't think of any more at the moment... I mentioned some older stuff too, because I don't know if what you listed is all you've seen or what you've seen recently. ^_^ You can look up show descriptions on AnimeNewsNetwork's website by typing the name of the show into the search bar and clicking the result that has (TV) next to it. Happy watching~

Monster is airing on SciFi, Mondays at 11 IIRC. Premiere is today.
Other than that, all the shows suggested so far are solid. I'll pitch in Mushishi and Kino's Journey, as well.
As for fall season shows, it's a pretty weak season overall. Letter Bee / Tegami Bachi shows some promise. There's also the second season of Darker than Black, but that's pretty much all I can see worth trying.

Seconding Sayonara Zetsubou Sensei! It's so bizarre and out there, but in a really different way than, say, Excel Saga.
I don't actually watch that much anime, so I might be snatching some suggestions from this list, too.

My current obsession is Hetalia Axis Powers.
Other recommendations: Darker Than Black (watched on opening week anime night) Nabari No Ou Zombie Loan

Since your original three are all sort of manly in their own ways, maybe check out some other awesome/manly stuff?
Shin Getter Robo or Getter Robo Armageddon are both sort of like a much darker, more violent Gurren Lagann.
GaoGaiGar is also very Gurren Lagann-like, and is newer than the Getters (if that is a factor for you), while still holding onto the old-time super-robot feel that the first arch of gurren lagann had.
The second arch of gurren lagann parodies the more heavy 80's real-robot feel of Mobile Suit Gundam, or Armored Trooper Votoms.
Also.... Digimon Tamers. Trust me, it's great.
